Meat from tiblice

Tiblica or lojdrica is the authentic Croatian meal originating from Međimurje region.
Today it is present in almost all regions of Croatia.

Sekeli gulash
(for 4 persons)

Ingredients:

• 75 dag pork
• 5 dag smoked bacon
• 40 dag onion
• garlic
• 50 dag sauerkraut
• 1 bay leaf
• 1 tablespoon spicy ground paprika
• 1 tablespoon cumin seams
• 1 l soup
• oil
• dairy sour cream
• salt
• pepper

Preparation:

Wash and drain meat. Cut it into chunks around 3 cm long. Peel and chop onion and garlic. Fry bacon cut in chunks. Add onion. When transparent, add meat and fry together. Salt, pepper, add ground paprika and garlic, drained sauerkraut and spices. Pour with soup. When boiled, reduce temperature, cover it and simmer 1 hour and a half. Serve with sour cream and cooked potatoes sprinkled with parsley.

Lovački gulash
( for 8 persons )

Ingredients:

• 5 onion bulbs
• 1 l water
• 1 tablespoon salt
• 1 dcl oil
• 30 dkg doe
• 30 dkg deer
• 30 dkg wild pork

Preparation:

Stir onion 15 minutes, add meat and simmer it 30 minutes (simmer all ingredients together 45 minutes). Add 1 l water and boil all ingredients for another 60 minutes.

Add spices to taste:

• 4 bay leaves
• 1 l domestic tomato concentrate
• 1 carrot (cut in rings)
• 10 dkg mushrooms (fresh or canned)
• 3 spicy peppers
• 2 dcl red wine (orahovačka frankovka)
• pepper
• salt
• spicy paprika
• sweet paprika
• vegeta

Seafood risotto

Ingredients:

• 500 gr frozen squids, cuttle-fish, musk octopus, octopus
• 50 gr frozen mussels
• For risotto preparation:
• 200 gr rice
• 1 onion bulb
• 3 cloves garlic
• fresh tomato or concentrate
• pepper
• salt
• parsley leaf
• oil

Preparation:

Clean seafood ingredients and cut them into spaghetti. Fry thinly chopped onion in hot oil, add cut mussells, chopped garlic and stir all ingredients together in covered pot until seafood becomes soften. Then add rice, salt, pepper and water.
At the and, add cut fresh tomato or a little bit of concentrate and chopped parsley leaf. Sprinkle with parmesan to taste.
In the same way fish risotto is prepared.

Gnocchi with gorgonzola

Ingredients and preparation:

Boil gnocchi in salted water in which you drop some oil. While gnocchi boil, place sweet cream in pan to boil and grate into it gorgonzola and parmesan (add other melted cheese to taste, such as Zdenka or similar).
When gnocchi are boiled, add them to sauce. Boil gnocchi in sauce a few minutes more. Meal should be served warm with lettuce.

Pašticada

Ingredients:

• 750 – 1000 g veal
• a few cloves
• 4 cloves garlic
• smoked bacon
• 1 onion bulb
• vinegar
• 100 g pork fat
• 1 celery root
• parsley leaves
• salt
• pepper
• grated nutmegs
• 1 glass prošek or red wine
• 1 teaspoon tomato puree
• 100 g carrot

Preparation:

One day before, leave veal in vinegar in which you put a few bay leaves, salt and pinch of pepper. Take meat out of drippings, prick bacon and cloves.
Mix thinly chopped celery, carrot, parsley and garlic cloves together anf fry them in fat in big pot. Add meat and simmer from all sides until meat is golden.
Add some vinegar, a glass of red wine, some nutmegs and 1 tablespoon of tomato puree. Continue simmering it around 1 hour adding from time to time water and wine.
Take out meat and cut it into slices. Strain gravy to get smooth sauce. Place meat slices into sauce and simmer pašticada, so that all ingredients mix together. On Makarska riviera, pašticada is served with home-made gnocchi or macaroni.

Roll with sour cherries

Ingredients:

•25 dag flour
• 1,5 dcl water
• pinch of salt

Stuffing:
• 1 kg sour cherries without kernels
• sugar to taste
• 3 tablespoons crumbs

Preparation:

Knead and roll out dough flat. Cover surface with sour cherries (or cherries), sprinkle with sugar and crumbs. Twist roll and place it into oiled baking tin. Smear dough with melted butter and bake it in oven.

Pancakes with chocolate

Ingredients:

• 20 dag flour
• 5 eggs
• 5 dcl milk
• 2 tablespoons orange liquor
• 1 tablespoon sugar
• 2 tablespoons instant cacao
• salt

Stuffing:
• 40 dag powdered chocolate
• 1 dcl orange liquor

Layer:
• 4 egg whites
• 10 dag powdered sugar

Preparation:

Mix all ingredients for pancakes with mixer and fry them in pan with a few drops of oil. Melt chocolate with liquor on vapour and fold pancakes to form a cake. Beat egg whites and sugar until firm peak form. Smear cake. Bake for a while in oven and serve.
